Spaetzle - The Day After

When making spaetzle from scratch, you would want to have some left overs because... you can make cheese spaetzle out of them! 

What You Need
For 2 people

  • 3 cups of spaetzle
  • 1/2 cup grated cheese, take whatever you like.
    I used Gruyere  
  • Salt, pepper
  • Some butter for the non-stick pan
  • 1 big onion, cut in rings

 How It's Done

  • Heat one non-stick pan and roast the onion rings. Sprinkle a little salt over it. Don't add oil. You want the onion rings to roast nicely.
  • Heat another non-stick pan add a little butter to it. Add the spaetzle, stir frequently so they don't burn.
  • Add the cheese to the spaetzle.
  • When the onions are nicely browned and the cheese on the spaetzle nicely melted, put the spaetzle on a plate and decorate with the onion rings. Serve with a green salad.

Making Spaetzle - Attempt #2

There was nothing blissful about creating today's Spaetzle.

You should see my kitchen! Took me a good half an hour to clean everything again... Three weeks ago, when I tried to make Spaetzle for the first time, the experience was more fun. By now, I've tried two different recipes but I'm not content with either one of them. I know that the dough needs to be elastic, not too liquid and not too tough. And that's basically the secret!

I'll give this another try, of course, and maybe next time I won't use this Spaetzle making device but I'll try the "advanced" method. I'll master that!

My First Attempt on German Spaetzle

On Friday, I had guests over who like hearty food. So I thought of cooking something German, something I usually don't do. Going with my Noodle Bliss theme, I decided on Spaetzle (the "German noodle") to go with Pork Medaillons on white wine creme sauce. 

My first attempt in making spaetzle was only semi-successful that's why I won't publish a recipe here. Need to experiment with it a bit more. The meat dish came out perfectly though, for which I didn't follow any recipe but simply used my own experience. (Recipe to come.)

A nice surprise though was that I could find a spaetzle maker at Whisk on Bedford street. Kudos to this store for having such a broad variety of kitchen utensils. Once I am ready, I'll be buying a pasta maker there too!
