Party Pasta Salad With Lemon-Mayo Dressing

When thinking about dishes for my recent birthday party, I was of course also considering some pasta salads. While I have a couple of favorite staples, I also wanted something new and came up with this delicious addition.
Since this is a party salad, start partying already and don't measure everything down to the ounce. It will turn out lovely if you just follow these basic steps.
What You Need
1 helping for ~ 8 to 10 people
- 1 box of elbow pasta (16oz)
- 1 package (8oz) baby bella mushrooms, cut in quarters or smaller
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- 1/4 tbsp salt
- 2 lemons, juice
- 1/2 a jar or ~ 8oz mayonnaise
- 1 red bell pepper, cut into little cubes
- 1 can artichoke hearts (13.75oz), broken into smaller pieces
- 1/2 tbsp salt
- 1 tbsp pepper from the pepper mill
How It's Done
- Cook the pasta per instruction. Let cool.
- Whip up the dressing in a big bowl by combining the mayonnaise, the lemon juice, salt and pepper.
- In a sauce pan, heat the olive oil, add the quartered mushrooms, add the salt and saute for 3 minutes. Let cool.
- Add the pasta to the bowl with the dressing.
- Fold in the artichoke and the bell pepper.
- Add the mushrooms and carefully mix everything.
- Taste and add salt or pepper or more lemon juice if needed.
